Singgang ikan is my cheat dish when i don't have enough time to cook for the kids or when i have one of those lazy to cook days. I usually feel guilty buying outside food because of the MSG so i try to find the simplest of recipe. this dish is my favourite up until now (best eaten with rice and ulam and sambal belacan!) and the simplest out of all dishes.
The singgang is super easy, no hassle and uses minimal ingredients. it's also a perfect home remedy dish if your child has the flu or cold. not if he/she has a sensitive tummy though, because it tastes sour.
Basically all you need are as below:
1. a slice of mackeral or tenggiri (i usually use half slice because its just enough for 2 kids lunch and dinner)
2. 1 Onion (sliced)
3. 2 bulbs of Garlic (sliced)
4. 1 stalk of lemongrass
5. 1 piece of tamarind or asam keping
6. 1/2 tsp of tumeric powder or serbuk kunyit
Dump all the ingredients in a pot and boil away! oh and add in salt and pepper to taste as well.
I think this dish is suitable for kids 1yo and above. if you're making it for the first time though, don't add too much tumeric cuz it might upset the little tummies. however maybe different babies take it differently. Just that tia and riz would have a bit of loose stool if i put too much tumeric. quarter teaspoon will do.
Serve this dish with rice and i would sometimes steam broccoli or some kind of toddler approved greens as a side dish. hehe. so good luck mommies!:)
